The Kettle Shed Tea Company Iron Lady

Country of Origin: China Leaf Appearance: deep green, somewhat rolled Ingredients: oolong tea Steep time: 3 minutes Water Temperature: 175 degrees Preparation Method: stainless steel infuser basket and ceramic teacup Liquor: gold The taste of this tea was mellow and sweet with a fruity floral undertone. There was a bit more depth to the second infusion so I would suggest rinsing the leaves before brewing your first cup. A pleasant creamy, roasty quality came more to the forefront. There was no bitterness or astringency to speak of, even when brewed for longer than the recommended three minutes. As far as Tie Guan Yin goes, this tea was sort of middle of the road.…

The Kettle Shed Tea Company Keemun Congou

Country of Origin: China Leaf Appearance: small, dark Ingredients: black tea Steep time: 30 seconds Water Temperature: 212 degrees Preparation Method: porcelain gaiwan Liquor: deep reddish brown Keemun is one of my favorite types of Chinese black tea. I was incredibly sad when I opened my package of samples from +The Kettle Shed: Tea Company and saw that the lid had popped off of this tin. There’s no use crying over split tea, thankfully there was still enough leaf left to brew. The taste was earthy and sweet with just a touch of astringency. A slightly fruity note ended in a wine-like aftertaste. I had to lighten up on leaves a bit while brewing in…

The Kettle Shed Tea Company Assam

Country of Origin: India Leaf Appearance: small, dark with some golden tips Ingredients: black tea Steep time: 3 minutes Water Temperature: 212 degrees Preparation Method: porcelain teacup and mesh infuser Liquor: deep reddish brown I don’t get to drink Assam very often (even though I love it) so I was really excited to receive a sample tin of this offering from +The Kettle Shed: Tea Company. Although the steeping directions said 3 to 5 minutes, I erred on the side of caution and went with the lower number. The taste was brisk and malty with just the right amount of astringency. It had a subtle sweet quality and a bright, clean finish. When I…

The Kettle Shed Tea Company Organic Korea Jeju

Country of Origin: Korea Leaf Appearance: small, dark green Ingredients: green tea Steep time: 2 minutes Water Temperature: 175 degrees Preparation Method: porcelain teacup and mesh infuser Liquor: deep gold I was really excited to try this one because my exposure to Korean teas has been very limited. In fact, the last Korean tea that I reviewed was Boulder Tea Jeong Seon way back in 2009. According to the product description, it was grown on Jeju Island using controlled organic farming techniques. The taste was mellow and vegetal with a sweet, buttery finish. There was also a pleasant toasty quality that made it a very comforting cup of tea. It had just the right…

The Kettle Shed Tea Company Earl Grey

Photo: The Kettle Shed Tea Company Country of Origin: not listed Leaf Appearance: small, dark Ingredients: black tea, flavoring Steep time: 3 minutes Water Temperature: 212 degrees Preparation Method: ceramic teacup and mesh infuser Liquor: deep reddish brown +The Kettle Shed: Tea Company is a “new to me” company based out of the UK. I was immediately drawn to Zoe Nixon’s story and enthusiasm for tea. In addition to selling online they also have an adorable booth at the Chiswick Food and Drink Market at Dukes Meadow. As many of you know, I have a contentious relationship with Earl Grey. The aroma of the dry leaves wasn’t super strong when I opened my tin of…
