Peony Tea Shop Taiping Houkui

Leaf Appearance: deep green, large and flat

Steep time: 2 minutes
Water Temperature: 175 degrees
Preparation Method: glass teapot
Liquor: very pale greenish gold

There are some teas that just capture my imagination and Taiping Houkui is one of them. I adore the large, texture leaves and the way they float in the water reminds me of a Leafy Seadragon (coolest looking seahorse ever, Google it!). This particular tea was incredibly aromatic and refreshing. Although it could be described as light, the taste was also incredibly complex. There were vegetal and floral notes alternating throughout each sip. I can't think of a singular thing to compare it to which would have both tastes, sugar snap peas and orchids perhaps? It had a natural sweetness that I really struggled to describe. The second infusion was just as enjoyable. I immediately felt the need to tweet +Derek Chew from +Peony Tea S. to tell him that I thought this tea was exquisite. It's late at night and I'm a little tealogged, otherwise I would not be hesitate to steep these leaves a third or fourth time.
